Ingredients
For the peppers
2 large red bell peppers, deseeded
¼ cup water
Pinch of kosher salt
For the stuffing:
1 lb ground beef
½ cup frozen corn
½ cup cooked rice
½ white onion, diced
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tsp fresh oregano, chopped
1 tsp dried basil
½ tsp red pepper flakes
Parmesan cheese
Preparation

Preheat oven to 375º F.
Cut tops off peppers, remove seeds.
Soften peppers: Microwave with water, 5 minutes. (Sprinkle the inside of the peppers with kosher salt, add the water to the bottom of a microwave-safe baking dish, cover, and blanch.)
Place in baking dish.
Cook rice.
Brown ground beef.
Mix beef, rice, corn. (Add onions, parsley, oregano, red pepper flakes, basil, garlic. Cook 5-10 minutes. Add cooked rice.)
Stuff softened peppers with mixture (and top with a generous amount of Parmesan cheese).
Bake 30 minutes. (Cook until fork-soft and the cheese is browned and bubbling.)
Sprinkle Parmesan cheese on top.
Serve hot. Enjoy!
