Making Ice Cream Outside 🍦

A recipe for those who live somewhere cold!

Equipment

Ingredients

  • 2 cups heavy cream

  • 1 cup whole milk (other milks can be used, but this may result in an icier blend)

  • 1/2 cup cane sugar

  • 1 tbsp vanilla extract

  • 1/4 cup vanilla sugar (optional, substitute for more cane sugar)

Preparation

This is best done when it’s below freezing outside.

  1. Add all the ingredients to the bowl of a stand mixer.

  2. Place the bowl outside to chill for 30 minutes.

  3. Attach the paddle to your stand mixer, set it to the slowest speed, and let it run until the mixture reaches a soft-serve consistency. This process may take up to two hours, depending on the outdoor temperature. If you'd prefer not to run your mixer that long, extend the pre-chill time in Step 2.

  4. Once the desired texture is reached, remove the bowl from the mixer and scrape (or lick!) any ice cream from the paddle.

  5. Return the bowl to the cold outdoors for another 2–3 hours to allow the ice cream to thicken further.

IMPORTANT:

Extreme cold temperatures can put a lot of stress on your KitchenAid mixer. Only make this recipe if you feel comfortable taking that risk.

It helps to use a dedicated outdoor outlet.

Pre-chilling the bowl outside will help shorten the mixing time.
