Ingredients
2 pounds Gala apples
3 pounds Honey Crisp apples
2 navel oranges
1 cup maple syrup
3 whole star anise
5 cinnamon sticks
1 whole clove nutmeg
1 tsp whole allspice
1 tsp whole cloves
10-12 cups water, or enough to cover
Preparation
Core and slice the crisp apples and juicy oranges. Add them to the pot with the spices and other ingredients. (Put the spices in a sachet if making apple cider butter.)
Simmer for 2-3 hours until soft and mushy. Mash into a rich, applesauce-like texture, then simmer 30 more minutes. Strain and let the fragrant cider cool before enjoying.
